I used the Japanese Kuri squash which is a fiery red colour. It roasts well. You can use any drier variety of squash for this curry.

This versatile recipe can be made in various guises – you can freeze it in a mould or in individual serving dishes and serve it with lime wedges dipped in sugar. Or, if you don't freeze it, you can use it as a filling for a tart or tartlets.
