Peach and Iced Mascarpone Sundaes
/Ingredients
Ice Cream:
- 1 cup vanilla ice cream, softened
- 1 cup mascarpone
- 2 tablespoons honey
- 2 teaspoons lime rind, grated
Peaches:
- 3 large ripe peaches, peeled and diced
- 2 tablespoons lime juice
- 2 teaspoons lime rind, grated
- 2 tablespoons honey
- 3 large biscotti, crumbled (about 1½ cups)
- ¼ cup salted pistachios, chopped
Method
Whisk together ice cream and mascarpone. Whisk in honey and lime rind. Place in a bowl, cover and freeze for about 3 hours or until firm.
Combine peaches, lime juice, lime rind and honey and let macerate for 30 minutes or until peaches are juicy.
Layer 4 parfait or wine glasses with biscotti crumbs, peaches and juice, and ice cream, repeating layers and finishing with a sprinkling of pistachios. Serve immediately. Serves 4
