Cucumber pickles
/INGREDIENTS
- 1 English cucumber, thinly sliced
- 1 tablespoon kosher salt
- ¼ cup rice vinegar
- 2 tablespoons mirin
- 2 teaspoons sugar
METHOD
Combine cucumbers with kosher salt. Place in a colander and let stand at room temperature for 15 minutes or until cucumbers are wilted and much of the water has been extracted.
Press on cucumbers to squeeze out remaining liquid and pat dry with paper towels.
Place in a bowl with rice vinegar, mirin and sugar and toss to combine.
