Apple Cake

Apples star in this simple dessert. Serve after a main course of pork for a different take on a superb combination. 

Ingredients

  • 3 tart apples, peeled, cored, thinly sliced
  • 1 tsp lemon juice
  • 1 tsp grated lemon rind
  • 3/4 cup plus 1 tbsp sugar
  • 1 tsp cardamom
  • 3/4 cup unsalted butter
  • 2 eggs, beaten
  • 1 cup sifted all purpose flour

method

Preheat oven to 350 F. Grease a 10-inch baking pan.

Toss apples with lemon juice and lemon rind. Sprinkle in 2 tbsp sugar and cardamom. Toss together and arrange in base of baking dish.

Melt butter in a pot over medium-low heat until it turns a nutty brown, 6 to 8 minutes. Remove from heat and stir in all but 1 tbsp remaining sugar. Stirring vigorously, add eggs then flour until mixture forms a batter. Pour over apples and spread in an even layer. Dust top with remaining 1 tbsp sugar.

Bake 40 minute or until top is golden and edges are bubbling. Serve warm with ice cream.
