They are the brainchild of chef Roger Wils, who rose to fame running the beloved (and now missed) Cafe Brussel in Toronto. Using fresh, locally-sourced, organic ingredients, his sauce bases (which are fresh and also fresh-frozen) include a classic Demi Glace de Veau, a Demi Glace D'Agneau and a lovely Demi Glace with lingonberries and Cognac.
