Miso Roasted Salmon

For the prettiest presentation, undercook the fish slightly (about 2 minutes) and place it under the broiler with the door open for 1 to 2 minutes or until the glaze on the fish is golden. Serve with snow pea greens or broccolini.

 

 

¼ cup white or light miso

1 tablespoon light soy sauce

2 tablespoons seasoned rice vinegar

2 tablespoons sake or mirin

1 teaspoon grated ginger

Freshly ground pepper to taste

4 6-oz (175-g) salmon fillets

 

 

Combine miso, soy sauce, rice vinegar, sake, ginger and pepper. Brush onto top of salmon fillets and leave to marinate for 1 hour.

Preheat oven to 450 F.

Place salmon in an oiled baking dish. Bake for 10 to 12 minutes or until white juices begin to appear and salmon is slightly pink in centre. Remove from oven and serve with Sticky Rice Pilaff. Serves 4
