1 cup whipping cream ¼ cup butter ½ cup sugar 1 tsp grated lemon rind ¼ cup lemon juice Combine cream, sugar and butter in small pot and bring to boil, stirring occasionally. Reduce heat and simmer for 3 minutes. Stir in lemon rind and juice. Pour mixture into 4 1-cup ramekins and chill until set. Top with blue berries just before serving. Serves 4. |
